Quarantine: Spicy stuffed zucchini involtini.

An obvious take on the eggplant version but with the eggplant replaced with zucchini cut thinly with a mandoline and stuffed with pesto and ricotta cheese. Did I say veggies….yes but I can’t do without something that actually walks around so this time the meat was chicken sausage.

Not sure it made much difference but this was baked in an iron skillet despite the old adage not to do that with tomatoes. I’d recommend this method, if you have one. Very even baking.

Almost forgot the dessert…marionberry pie ala mode….vanilla of course!

Our wine was a very nice single varietal Mourvèdre from Darby Wines.

Highly recommended even if you don’t like veggies.
