Quarantine: Niçoise salad.

Still at home so pulling out more options for lunch…what should you have once you’ve had burgers, sandwiches, leftovers and chips and salsa? A Niçoise salad with lettuce and arugula from the deck “garden” and shrimp instead of the more typical tuna. Had with a nicely chilled glass of Mount Teneriffe Rosé.

Can also be made using salmon as pictured with a glass on Pinot Gris. Recipe here.

Delicious with whatever you choose and a nice change of pace.
