The interplay of spices, sweetness from the squash and the added mouthfeel of the quinoa and pine nuts all wrapped around the roasted maple chipotle Brussel sprouts makes this a great dish…for any occasion. Drizzled on top is a honey-Dijon vinaigrette…a perfect finish to the dish.
It’s a modification of the recipe so it’s ok to experiment a bit….but don’t leave out the spices. Záatar is one of them and is a must….so find or make some!
